Chicken Marinade:

Approximately 2 Tablespoons of Olive Oil

As opposed to slicing the breast in half, I personally find putting the breasts in a baggie, hitting them with a rolling pin firmly, but not overly hard breaks down the membranes, flattens the breasts to perfect grilling height and it retains any marinade you prefer. Another flaw I see is you can't just marinade chicken for 20-30 mins. Minimum of 4 hours to allow the marinade to be completely throughout the chicken.

I read a while ago that you can heat your chicken to internal temperature of 140ยฐ or 145ยฐ, as long as you let it rest and pasteurize for certain number of minutes (thereโ€™s actually a formula). Iโ€™m going to try your recipe, but Iโ€™ve never had any success cooking chicken all the way to 160ยฐ. Any thoughts on this?

Iโ€™m going to try this very soon on an older Weber Genesis that Iโ€™m in the process of restoring. I tell you what, with this simple and delicious method, this can be a staple breast meat for so many dishes: salads, tacos, fajitas, pasta dishes, grilled chicken sandwiches, etc. Thanks a bunch for sharing!
