I boil my diced gold potatoes in chicken broth with the skins on. Drain, add butter, salt & pepper and mash with a fork. I like mine a bit lumpy. No cream or milk, I add a bit of whipped cream cheese. It's always by feel and taste.

I have one I don't hardly use my stove anymore. I also got the air fryer attachment, after cooking my chicken I can brown the top. It's great for everything, chicken, fish, broccoli, eggs and so much more. I just love mine.

@JohnGlenn-s2rPressure cooker is a mainstay in my kitchen. I don't have an Insta-Pot though. Potato ricer? I swear by them. I love his dial texture. People commenting about this or that on potatoes. However you like them, gummy is not one that any appreciates. Choose the texture and flavors you like.

@Moving_Forward247I cook my potatoes in beef stock (no pressure cooker), then mash it with butter, add cream/milk (50:50) and stir until it's smooth and creamy, then add nutmeg & salt to taste. The nutmeg is essential! Don't know why anyone wouldn't add it.

@towersongLove this recipe! It did take about 20 minutes for the Instapot to build pressure but the end result was well worth it. Used around 2 lbs Yukon gold potatoes in 1.5 quarts of water and 1 tbsp sea salt in the Instapot then 4 tbsp of Irish butter and a ricer and less than 1/2 cup of heavy cream.

@datalore6187JG, Robuchon's recipe is far more interesting imho, no cream just butter, a lot ! And fresh herbs before serving makes a whole difference too, chives or dill for example.
