I'm a Filipino we and this is like a classic Filipino breakfast back in the old days when I say back in the old days it as far as in the 60's we call it tortang kamatis it's like a Filipino comfort food for breakfast some do it that way but some want it dry it's like they sautee the tomatoes until the juices dried then put the scrambleggs and cook it like s normal scrambled eggs

My roommate in college taught me to make this dish, all we had were eggs, spaghetti sauce, ketchup, sesame oil and rice. So Iโ€™ve been serving this over rice ever since. ๐Ÿ™‚

I saw this dish on the menu of a hip Chinese restaurant in Portland and didn't order it because I didn't think eggs and tomatoes would be all that exciting. Lucky for me, our friends ordered it and we ate family style. What a revelation! I think the version I've had used additional seasonings like sherry and ginger. The flavor was great -- more sophisticated than I ever thought eggs and tomatoes could be.

Tomato and egg was one of the first Chinese dishes I ever tried even before going there, and after spending nearly 10 years there, it is still an all time favorite of mine. Its considered comfort food for good reason. I DO like doing something many would consider strange...I like cold tomato and egg. Still over piping hot white rice of course, but something about the way the tomatoes juices taste when cold works even better with the rice in my opinion.

Funny. The Chinese add a bit of Liaojiu to remove the "fishy" smell of eggs and the Thai add fish sauce to them.

I do it the other way and still get a juicy dish. You cook the egg almost done and set it aside, put the tomatoes and cover them so they get soft but not let the water evaporate, and then put the egg back in to finish cooking and soak up some of the tomato liquid.

Hii Pailin, just wanted to leave a note of appreciation here for how wonderfully amazing ๐Ÿคฉuse of leftovers of the fridge this was. I am a medical student living on my own and cooking is something I enjoy doing as a break from my studies. But amidst all the hectic schedule of uni and studies, it is really hard to find time to cook regularly and I am often left with rotting vegetables in the fridge that I will end up throwing away :(( This recipe really saved the 3 tomatoes and 4 eggs I had in my fridge! ๐Ÿ˜ฎโ€๐Ÿ’จโค

Also, coming from someone who is very picky since young when it comes to eggs (just not a fan of eggs ๐Ÿคฎ), this recipe was simply phenomenal, with the simplest of ingredients! Thank you so much for your tips. โค

Here I was thinking you were going to say "juicy" so often, but with including "jooozy", you only said it 6 times! Also, love the idea of tomatoes first and then the eggs, because I've done it the other way around and the eggs always ended up a bit overdone; definitely need to try this method!

Growing up one Auntie would make egg and tomato but routinely burnt the eggs to the point where I refused to eat it again for years. This and other Chinese channels make it look so tasty so I might have to give it another try cooking it myself

Definitely classic Cantonese home cooking. It needs to be saucy and the eggs have to be in big pieces to be substantial, and some sugar to reduce the acidity from the tomatoes.

I would think your correct - the way you do it would let the Tomato Juices join with Liquid parts of the Scrambled Eggs and sorta, you know... meld that Tomato into the Eggs. I always add a few Tablespoons with the Egg when I do Scrambled or Omelettes. : )
