Bucatini Carbonara
It is difficult to follow and trust a chef who is a wearing a suit in the kitchen.
RECIPE COURTESY OF GEOFFREY ZAKARIAN
Level: Easy
That story about coalminers was a load of guff
Total: 30 min
Active: 30 min
Okay Geoffrey, you are being a little to posh here. Take your left hand out of your pocket as we have time for pool later. Don't try and look to smooth. You smothered the ladies compliment as if she were wrong when she was trying to smooth your direction to the cooks with a little good advice. You are a little too uppity for the show. Aloha, Hilo Paul
Yield: 2 to 4 servings
Ingredients
Get rid of the garlic!!! Not only is it not traditional it changes the dish and adds bitterness..2 times now and the garlic was the culprit..respect the hell out of this chef but omit the garlic.
Kosher salt
8 ounces dried bucatini pasta
NO GARLIC IN CARBONARA, PERIOD
1/4 cup extra-virgin olive oil, plus more for drizzling
1 cup diced pancetta
This is not CARBONARA !!!! Change job !!!
2 cloves garlic, sliced
Coarsely ground black pepper
Wow, this is insipid.
Apart from not being able to pronounce Guanchale, dude just plows over valid questions from the other people with no substantive response.
2 large whole eggs plus 1 large egg yolk
1/2 cup grated Parmesan
No garlic in carbonara
1/2 cup grated Pecorino-Romano, plus more for serving Active: 30 min
Directions
garlic? there is no garlic in carbonara.
Bring a high-sided pan filled with water to a boil. Season liberally with salt. Place the bucatini in the water.
Heat the olive oil over medium heat in a large saute pan, then add the pancetta. Cook until the pancetta has rendered and the meat is caramelized, about 3 minutes. Add the garlic and about 1 tablespoon black pepper to the pan to toast, about 1 minute. Add a ladle of pasta water to stop the cooking process and let simmer on low heat, 2 to 3 minutes.
This recipe is not authentic, so just an FYI. Every chef can do as they please, of course, but adding garlic and using pancetta to this dish is not Roman. Not sure that Geoffrey was exposed to the authenticity of this Roman dish. EVOO is never used either - you use the fat from guanciale.
Meanwhile, whisk together the eggs and egg yolk in a bowl. Add the Parmesan and Pecorino-Romano and whisk to combine. Slowly add a ladle of the pasta water to temper the eggs. Set aside. When the pasta is al dente, add the pasta to the pancetta pan straight from the water. Remove from the heat and add freshly cracked pepper to taste. Add the egg mixture and toss gently to coat. If the sauce gets too thick, add some additional pasta water. Garnish with a generous sprinkling of Pecorino-Romano and a drizzle of olive oil.

I have such a visceral reaction to metal scrapping against any pan... I can't do it. Repulsive

I made this tonight, it’s awesome!!! I used both cheeses like he did, and it was great, followed all the steps. But we used the pre-cooked bacon and I chopped it up and put it in the pan with olive oil and garlic, and my husband didn’t even know… He loved it.!

@jeanettebarr9090that's why the black pepper (sometimes put in carbonara) mimicks the "coal dust" in the dish
@pinkpastelheartsHad to order pasta on amazon.. Hard to find in stores.
@cmaur811Disgusting
@shawnkliewer9987Hi guys, my favourite version of carbonara, and in my opinion, the most authentic, includes one whole head of garlic boiled in a gallon of cream of mushroom soup, then add a chicken Knorr bouillon cube, then add to that a box of gluten free elbow macaroni that's been washed in the tears of all of your Italian grandmothers. Then I throw all of that into a tortilla, then into the garbage because who cares about authentic carbonara when every chef in Italy is fighting with each other over their own recipes. chefs kiss to your mom
@ekko808Actually very authentic, traditional recipe and technique - I would use "uncured and unsmoked" bacon and leave out the garlic - but definately use bucatini for sure.
@JohnZinkeWhat about the peas?
@branningstreet1034My bff loved mac and cheese in the crockpot. But lost her battle with covid
