But I'm a 62 yr old carpenter from Canada and I only tried it a few times and I've never tried this recipe and I don't have a bread mixer but those look so good.
But I can build a warm water proof house to eat them In.

I tried this recipe and my dough dosnt seem to rise like yours does. My butter was softened no melted and i used all all-purpose flour. Im thinking its becausd the butter was melted in youe video. Is that considered melted or softened?

The only flour I had in the house was Manitoba very strong bread flour, so went out yesterday to get some cheap plain flour from Lidl's to mix with it. Followed this recipe exactly except I mixed it by hand and kneaded it for 10 minutes. I even brushed on the melted butter while they were still hot (that made some interesting sounds). They came out exactly as you demonstrated. Terrific with a bit of ham and cucumber. Just what I was looking for. What a brilliant recipe!

I'm a professional chef and restaurant owner but only a humble amateur baker. When rick said he used a baking pan 10 by 10 he was referring to inches and not cm. That is 25 x 25 cm. I did not have the right size and could do a batch in a smaller pan 3 x 3 and then I made the final 3 has individual rolls on a cookie sheet.
Try to use the right size pan if possible because the texture and taste of individual rolls is not quite as nice as when the rolls are grouped together in my opinion (you won't get the same rise) . Now go and make some, I did and you'll love them.

Hey Rik. I made these yesterday as you are my go to now! I made 6 not 9 and my bad, I should have cooked them a little longer as they are a little stodgy. However, the process was just as you showed, rising exactly right and perfect. I make Foccacia with starter (process takes two days) so this was a bit different for me and I could not beleive how quick and easy it was. I just hiffed them under the grill as and this took away the stodge and made them cripsy and oh so good. Thanks Rik.

Ingredients:
• Flour: 500g (4 cups UK, 4 1/8 cups US) bread flour or all-purpose/plain flour - I used 250 all-purpose/plain flour and 250 bread flour
i did the recipe like explained my dough is hard
• Sugar: 50g (4 tbsp UK, 3 ½ tbsp US) granulated sugar
• Salt: 7g (1 ¼ tsp)
I bought a new stand mixer and the dinner rolls were my first go. I followed the ingredients, but my dough was far too dry. Can anyone advise me?
• Instant Yeast: 7g (2 ¼ tsp) or active dry yeast (proof in warm milk)
• Milk: 250ml (1 cup UK, 1 cup US) warm whole milk (38-40°C / 100-105°F)

• Butter: 60g (4 tbsp UK, 3 ½ tbsp US) softened, unsalted butter
• Egg: 1 large egg
I made this today and I don't know why but I had to add more milk as I mixed the dough. I think next time I make it I will add 1.5cups of milk instead of 1c. They were tasty though.
For Brushing:
• Milk or egg wash: 1 tbsp milk or 1 egg beaten with 1 tbsp water

• Melted butter: 30g (2 tbsp UK, 1 ¾ tbsp US) for brushing after baking
Preheat the oven to 180°C (350°F).
Hi Rik,, I tried your bread recipe for the first time bread baker.
I didn’t have bread flower so used plain flour.
Baked to your time and was not done. Had to bake for a further 15 mins. The taste was good but they were too stodgy.
I will try with bread flower and plain next time. See how I go? Do you sift your flour is the next question? Also what speed on your mixer? I think I beat the heck out of mine on medium speed that’s why they were stodgy.
PS my son text and said that’s good bread lmao 😂😂😂😂 that’s good for a first time fail.

I MADE THESE AND THEY ARE FANTASTIC. I TOOK SOME OF THE DOUGH AND MADE SOME CINNAMON ROLLS AND TOOK SOME OF THE DOUGH. AND MADE THE LIGHTEST FLUFFIEST DONUTS. MY GO TO RECIPE FROM NOW ON FOR THE DOUGHNUTS.I WOULD HAVE ADDED A LITTLE BIT MORE SUGAR AND SOME NUTMEG for the doughnuts OTHER THAN THAT, THEY'RE PERFECT..
