Instructions

1. Add the oil to a frying pan (skillet) over a med-high heat

2. Add the minced beef, salt and pepper and cook for 5 minutes until the beef is browned breaking up any large bits as you cook the beef.

3. Add the onion, red bell pepper, yellow bell pepper and garlic and fry for a further 5 minutes, stirring often.

4. Add the fajita seasoning, smoked paprika, beef stock cube, hot sauce and tomato puree and cook for another 2 minutes stirring continuously.

5. Add the passata, black beans, sugar and water. Stir everything together, bring to a simmer, turn down the heat and cook for 10 minutes stirring occasionally.

"Half a cup of water" Nicky?? Don't be selling out to the US audience and using the medieval 'cups' system as a unit of measurement!

6. Sprinkle on the cheese, place a lid (or foil) on the pan and cook for a final 2 minutes to allow the cheese to melt (if you don't have a lid, just cook for a couple of minutes longer, or you can place under a grill/broiler if your pan is grill-proof.

7. Serve over boiled rice, topped with a sprinkling of fresh coriander. I like to top with sliced jalapeños, avocado and chopped tomatoes too.

I've made this twice, just for me, so I've reduced the spices a lot. It's delicious, and freezes well for a ready meal. I'm American and an aficionado of Mexican and Tex-Mex food. I worked amongst Tex Mex people for 12 years and ate at their tables, and I can tell you with personal experience that Mexican food is much milder in the US. British Tex Mex is too hot, and though the Mexican natives love their 'pepino' which is Jalapeños, they tend to have it on the side of the plate. This dish is easy to adapt and makes it easy to have that flavour homemade. 😊

Made this tonight had it in a seeded wrap with tomatoes and sour cream dip. Really tasty. Think i will put in 3 tablespoons of hot pepper sauce next time and make it a bit spicer. As i will definitely be making it again. So nice.

I used sweetcorn instead of beans (everyone hates beans in our house) and this dish was an absolute winner! My husband is walking around showing everyone his "food baby" and has eaten about 4 or 5 helpings. It's all gone! Even my fussy kids liked it. It goes well over baked potatoes too. This is definitely going on our regular recipe rotation.

Sorry, this is very far from Texan food, Mexican food, or Tex-Mex food. All three of those cuisine styles serve as umbrellas for many local styles, but never anything like this. Over-tomatoey, over-spiced, no delicate interplay of flavors, and highly likely to cause severe heartburn. I bet she also loads her Mexican rice with chili powder and maybe even chiles instead of using garlic, onion, and tomato. Come to Texas or Mexico and try the real thing.

I grew up in the Arizona-Sonora desert and this recipe deserves ridicule. Bell pepper? What makes this Mexican? Tex-Mex fajita seasoning? Generic hot sauce? Inappropriate black beans? Italian passata? A frivolous garnish of cheese, avocado, & cilantro? I don't doubt that this concoction tastes good, but, please, don't label it as "Mexican!"
