1. Prepare the blueberries: Add the blueberries to a blender and process until smooth. For a deeper flavor and better texture, pour the puree into a saucepan and cook over low heat for 10โ€“15 minutes, stirring frequently. This reduces excess water and concentrates the blueberry flavor. Let the mixture cool completely.

2. Whip the cream: In a large cold mixing bowl, whip the heavy cream to stiff peaks using an electric mixer.

3. Combine the base: Add the sweetened condensed milk, chilled blueberry puree, and vanilla bean paste (if using) to the whipped cream. Beat on low speed just until combined.

4. Final mix: Use a spatula to gently fold the mixture, making sure to scrape the sides and bottom of the bowl for even mixing.

What kind of Heavy Cream are you using? Why is it that when I whip it doesn't get creamy to stiff peaks?
My first attempt was when I made your Strawberry Ice cream, and I used Heavy Whipping Cream. Later, I realized that Heavy Whipping Cream is not the same as Heavy Cream. But now I've made this, Blueberry Ice Cream, using Heavy Cream. But when I whipped the Heavy Cream for about 15 minutes, it did not get any thicker. definitely not to stiff Peaks. Foamy but not thickened. The Ice cream turned out okay. Less icy than the Strawberry one, which I used, Heavy Whipping Cream. But still not as creamy as you are describing. I also cooked the blueberries. What am I doing wrong?

Thank you for sharing your knowledge and food experience.

I just tried your Strawberry ice cream.

I must say I made a mistake. Not knowing the difference between Heavy Cream

and Heavy Whipping Cream, I used the Heavy Whipping Cream. It turned out okay. But a bit icy. I will definitely try again, of course with Heavy Cream this time.

And of course, the blueberry Ice cream too.

But my question is, if I cook the Strawberry puree, like you cooked the Blueberries, will I get it more creamy texture?

Cooking the blueberries will evaporate most of the vitamins and the minerals, better don't do it ... Or if you insist on cooking them, then you can do it on steam and after to blend them to minimise nutritions loss.
