just made these and they are yum! I have a couple questions hopefully someone can answer for me 1) did you oil/butter the bulk fermentation bowl? 2) My dough didn't rise much in the fridge overnight so I left it out at room temp for an hour+ to rise before shaping and I'm wondering if that was a necessary step or not.

I make ciabatta buns, and always use a white kitchen trash bag, with a small jar on one end to hold the plastic above the pan - I'm not a fan of plastic of any kind on my buns.
