Why not cook egg with tomato rather than separate, please come up with a better way

It is a dish you rarely see on menus, yet tomato and eggs are a classic staple of Chinese home cooking. Tomatoes, eggs and spring onions may seem like simple, basic ingredients but the subtle complexity of this dish is often overlooked as it is such a humble and easy-to-cook dish. Have you ever taken a bite of tomato and eggs and wondered how the eggs manage to taste like tangy tomatoes, yet is still fluffy? Although tomato and eggs seem like an easy omelette thrown in together the pan right off the bat, these two ingredients are actually cooked separately to retain its respective textures.

In our recipe, the tomatoes are firstly stir fried with fragrant spring onions and thickened with a cornflour slurry. Then the beaten eggs are gently, but not fully, cooked on their own until creamy, before the tomato mixture is added in. This allows the half scrambled eggs to absorb the rich, robust tomato juices to create that amazing combination of texture and flavour.

To some, tomato and eggs may taste like nostalgia, and to those who are curious of how real Chinese comfort food tastes like - try a heaping scoop of aromatic tomato and eggs over steaming hot rice!

I’ve been trying out this recipe after watching NCT Chenle cooked this on their show. Then I found your recipe and I tried it without adding cornstarch since I don’t have any atm, but still good!
This is currently my go to recipe whenever I don’t have much time for breakfast :)

Thank you. I made this but adapted it by adding chopped carrots, shallots and garlic, and adding a tablespoon of oyster sauce to round out the flavors. The sauce itself is a good substitute to Hainanese chicken Chop.

Yeni. Are you still working there? You are lucky to be born during this era of Youtube. Reminds me of one of my neighbour’s maid a Vietnamese. The boss would come back from dinner n tell her to cook something she ate outside and probably showed her a picture n asked her to figure out or she would give her a brief info about a dish and ask her to figure it out. (The boss could not cook herself).Being illiterate, she would also scroll through pictures in a simple cooking book and try to figure out in her mind . Neither in her almost 15 years of service was she given to taste any outside food to try but due to being a single mother of 3 young school going children, she patiently endured her hardship cooking 3 meals a day with demanding menu “ordered” by each member of the house esp. breakfast time , and luckily she has basic foundation in cooking herself in Vietnam so she managed to cook all the food desired by her boss if not better. She saw through her oldest 2 children to University but the youngest is a drug addict as she left him at a very young and impressionable age. She left for home at the age of 50...

i like the use of corn starch in this recipe. Some are saying to not add it, but by using it you can add more water (i use stock) which gives it more volume and more to enjoy =)

I dont put any cornstarch & ketchup.the tomatoes chunk will thicken itself.usually makes it round shape pizza.my son love it so much.

Wow I had no idea this was a dish in China ! I grew up eating this, it’s very popular breakfast in the Gulf region and made very similarly except we eat ours with bread not rice :)

You can add egg before tomato, or after. It's totally up to you, and the taste is actually the same. Tbh this dish is really easy, all you need is just tomato, egg and salt lol.
