This recipe is what I believe something called "chili garlic noodles" should be. In Thailand we have a dish where spaghetti noodles are stir fried with garlic, dried chilies and Thai basil...which actually sounds much better than it is. SO I decided to take that flavour combination and create a version that I think this dish should be.
The result turned out fantastic! Al dente noodles coated in a super umami sauce, loaded with smoky dried chilies and lots of garlic, with anchovies for depth and a touch of Thai basil for freshness.
Made this as is and the garlic noodle afficionado in the house was inspired to learn it themselves. Great recipe, thank you for sharing!

Gonna try it. I got some medium sized dried chillies but they seem so spicy and I like spicy food. Not sure how much I’d add to this dish to find the right balance

I just made this dish earlier and think I used too many dried chilis.. lol. Had to bring the spice down with a bit of water and sugar.
@Paolo1983-kingofthewolfmeni got tired of eating puttanesca so i tried this today. thai basil is a nice addition. perhaps adding caper or pecorino cheese will add nice tang.
@crystalyun833I didn't have dried chilli's so I used chilli oil, I couldn't find whole anchovies at the local grocer so I used anchovy paste, I don't have Thai basil so I used genovese basil ... the only ingredients I had in abundance were garlic and oyster sauce ... despite all the substitutions it was delicious.

Butter: I have never seen this man in my life
If you do not like canned sardines do not make this dish. The canned sardine taste ruins the dish. The butter also gives it a weird flavor. Just to make sure I was not being to quick to judge, I ate an adult portion. It did not work for me but I am glad I tried it.
