Many people think Chicken Tikka Masala and Butter Chicken are the same, but they’re not!
Today on our delicious journey, I’ll show you the real difference, as we make an authentic, smoky, and creamy Chicken Tikka Masala right at home.

This dish is all about balance, the charred flavours of perfectly grilled chicken, the richness of masala, and the aroma of roasted Kasuri Methi. It’s a true North Indian classic that never fails to impress!
INGREDIENTS:

1. For the Chicken Tikka (Marination):
- 1 kg Boneless Chicken chunks
ok so that isn't a teaspoon she is measuring out.
- 1 tsp Garlic paste
- 1 tsp Ginger paste
I just don't want to admit that I liked it. ❤
- ½ tsp Turmeric powder
- 1 tbsp Red Chilli powder (mix of Kashmiri, Byadgi & Guntur)
The charcoal piece makes it difficult for me to try the delicious looking recipe.
Can we do without ?
Plus some spices not available .
- 1 tbsp Coriander seed powder
- 1 tsp Cumin seed powder

- 1 tsp Black Pepper powder
- 1 tsp Garam Masala
Your measurements of what you place in the mix are way off, but I understand what you mean. Use grams instead of volume - it's more accurate.
- ¾ cup Yogurt (Curd)
- 2 tbsp Mustard Oil
This has an incredible amount of spices! Why so much total spice volume? That's about 1:1 ratio of chicken to spice powerder.
- 1 tsp Chaat Masala
- 1 tsp Roasted Kasuri Methi, crushed
The creativity that goes into this is incredible. Indian food is my passion.
- Salt to taste
- Juice of ½ Lemon (1 tbsp)

- Mix everything thoroughly and marinate for at least 30 minutes.
2.For the Gravy:

- 3 tbsp Peanut Oil
- 1 tbsp Butter

- 3 Onions, finely chopped
- 1 tbsp Garlic paste

Holy crap! You use spice the way the French use butter! looks great and I would love to try it but that is a lot of spices that I wouldn't use in any other dishes I would have to go out and buy just for this.

- ¼ cup Water (used for blanching)

METHOD:

Step 1: Prepare the Gravy:
- Heat oil and butter together. Add onions and sauté until soft and pink.

- Add garlic and ginger paste, sauté for a minute.
- Add turmeric, red chilli, coriander, cumin, and garam masala powders. Mix well.

- Add the blanched tomato puree and a little water to deglaze.
- Add salt and cook for 4 to 5 minutes until oil separates.
This is NOT CTM it's way too complicated..This dish was invented in Scotland..It's a UK dish NOT INDIAN..Why oh why did you do this like an Indian curry..???
- Switch off the flame and stir in the cream.
Step 2: Cook the Chicken Tikka:
Nothing great or different! Unhygienic as well! The difference mentioned is not right
- Cook the marinated chicken in a tandoor, oven, or directly on a tawa.
- Deglaze the remaining masala with a splash of water and pour over the tikka.

- Add 1 tbsp butter and cook for 5 to 7 minutes until the chicken is just done.
Step 3: Smoke & Combined:
INVENTED IN GOOD OLD GLASGOW !!
- Heat a small piece of coal till red hot. Place it on a knife, drizzle ghee over it, and cover the pan for 10 minutes to infuse a smoky flavour.
- Pour the prepared gravy into the pan with the tikka, this keeps all the smoky, spicy flavours intact.
The best
- Cook for another 3 to 4 minutes on low flame.
Step 4: Garnish & Serve:

Drizzle cream, sprinkle Kasuri Methi, Chaat Masala, fresh coriander, ginger juliennes, and sliced green chillies. Serve hot with parathas, naan, or jeera rice.

I don’t have the desirable oven top for a coal to burn…what could I do instead? Also, isn’t burning a coal inside pretty dangerous? About to buy a nice griddle pan & try this one day soon! Appreciate your vids!

@chriswindle3392I made this recipe today and it was excellent!! I have an electric stove (hob) so I couldn’t do the smoking part at the end with the charcoal. That’s ok though, it was delicious, and my husband who is of Indian heritage wholeheartedly agreed!
