I bought several things off your Amazon list including those hog poker things. I have cooked my CFC this way probably 10 times since watching your video, but feel like I still haven't locked it in. I do marinate mine overnight in salted buttermilk, but then I lightly pat dry, and do a double dredge (I've tried egg and I've tried just the buttermilk). I use King Arthur all purpose flour. I fry them just like this. They never get all the beautiful crusty peaks like yours, and they aren't crispy when we go to eat them. Some of that is due to cooking more batches so they sit, I guess? But even the last batch just doesn't have the crunch you want. It's more like a lightly breaded chicken. Maybe it's the all purpose flour? I forgot until now that you're using a self-rising flour.

Cut each breast lengthwise into two thinner, equal pieces. Place in a gallon bag and pound flat to about 1/2”. Remove, then season one side with salt and pepper. Pour buttermilk over and coat well. Coat in flour placed in a shallow dish. Fry in 1/2” preheated oil over medium/high heat for 3 minutes per side until golden brown. Use drippings and prepare Recipe #169 (see below) to serve over the chicken!

I made this and it was amazing. I didn’t make the gravy because my husband wanted to eat right away. I will next time, and yes there will be many more next times with this recipe. I fixed home fries or jojo’s some potatoes and some sweet potatoes with my chicken. I look forward to seeing what you are making every day Tammy!
