'Brulé à vif' means instantly carbonized on its surface, it's not a way we cook a beef and a big mistake, also it's not 'well cocked' inside.
We say 'bleu' (blue) or 'en aller-retour'(quickly each side) or 'saignant'(bloddy), medium for medium and 'Bien cuit for ''well cocked', Très cuit for 'very well coocked'.

And he does speak perfectly French himself with almost zero accent.

He is so good he spent some long interviews in french with french native and did not miss a beat. Only the likes of Jody Foster & Sigourney Weaver impressed me that much with such ELITE Level of the VERY tough , complex and demanding French Language. Trust me few current french people can talk just half as good as Jody, Sigourney & Bradley...
