Binging with Babish: Steak au Poivre from Archer

Video Overview & Insights

This week, we're headed back to the Archer archives in search of a tasty dish to recreate, and I could find none better than steak au poivre - even if it was served sans 'poivre'. We won't make that mistake in the BwB kitchen, as we recreate this French classic with some modernized veggie sides.

Are we still doing phrasing? Still? It's been like 10 years.

@2:17 you don't need to chop thyme for a sauce like this, you can just pull it off the stems

This has become the meal I make for Dad every year on his birthday. The first time I made it was with a certified wagyu steak from Kagoshima prefecture.

Is it just me or is that a lot of pepper corns?

I always Imagined it was a double reference to 2 different Scotches Glenlivet for the Scottish sounding Scotch and Blue referencing the Johnny Walker Blue indicating that Archer only drinks top shelf high quality Scottish Scotch.

Was Bob always the voice actor for Archer? 🌈

Why would reducing a sauce by half not make sense? Thats literally a thing?

@HamTheBacon

This should have been Charlie's milk steak from it's always sunny. Because if im not mistaken steak au poivre is crusted with pepper corn.

Um, that steak is very overcooked. I like rare to mid rare and that looked medium well to me. I have problems with food texture and cooked meat is one of them. So if I ordered that medium rare in a restaurant and it came out that done, I'd send it back.
The sauce and veggies look wonderful.

Why, why, and WHY would you wipe out the browned butter at 03:55?!?

That steak looks overcooked. Way too much gray and far too little pink.

And the American ruined it with heavy cream, as usual.

I made this dish for my senior prom date a few years ago. I confessed my feelings to her shortly after and she told me she wasn't ready for a relationship. She got married to another man a few months later but besides that the dish was great.

Sitting here, profoundly sleep deprived, four and a half years later, and I'm realizing you had plenty of pepper that was sifted out and yet you still used your pepper mill for the carrots and peas.
