This cooking video was most confusing. The camera was focused on the food rather than the chef, he wasn't talking super-fast while slopping ingredients around the kitchen and making a mess, the resulting meal did not look incongruous to what the chef was telling me it looked like, and I'm pretty sure I would not get food poisoning from eating it.

Nice...I lived in France for many years and there many people parboil the potatoes and add a bit of white vinegar to the water. They claim it gives them an extra good taste. I have tried this and agree. What are your thoughts on this approach?

I've always thought deep-fried is the way to go, especially for foods like fritters, fries and nuggets. The problem is that it usually uses a lot of oil, and contamination problems can ensue. Last year, however, my house's oven was retired due to a broken heating element, and was replaced with an air frryer. I was considering getting a big oven for pot roasts and stuff like that, but the kitchen wasn't big enough. But still, this can also work for air fryers!

-4 Kennebec potatoes

-8 TBSP cup extra virgin olive oil

-Pinch of salt

If you put vinegar in the water the acidity prevents the pectin from breaking down, and your potatoes won't fall apart.

Flavor Options:

-add Garlic and butter

Adding a few tablespoons of vinegar to the water when par-boiling will prevent pectin break down and keep the fries from falling apart due to the acidity of the water.
Secondly - just par fry for 1 minute at 400F , then a final fry in oil at the same temp for 3-4 minutes - if done properly, minimal oil will absorb into the fries. This method yields nearly the same calories as frying in oil.

Heat the oven to 225°C / 450F

Wash, and peel potatoes.

Cut the potatoes into 1.5cm / 1/4 inch thick batons, fires.

Part-boil in a pan of salted water for about 6–8 minutes until just tender when pierced with a skewer.

In Belgium, our secret is, we fry fries twice. I don't know how this translates to the oven, but maybe it would be interesting to bake fries twice shortly instead of baking them once for 16 minutes.

Drain well, place on an oven tray, and place in the fridge to evaporate the moisture.

Generously drizzle with olive oil

Bake in the oven for 12–15 minutes until the fries are golden brown and crisp, turning them a few times. Drain on kitchen paper, season, and serve immediately.

I've lived in Kennebec my entire life and I'd honestly never heard of kennebec potatoes. We don't actually grow many potatoes here, that's all up north so I'd expect them to be called Aroostooks or something.

This is very similar to Ethan Chlebowski’s and Adam Ragusea’s takes on crunchy oven baked fries. Ethan took Adam’s version and tweaked a little (like vinegar in the parboiling water). I like the way you explain why you’re doing what you are, like putting the parboiled fries in the fridge.
I think the French fry gods are telling me to make these…

Adding a Tbsp or 2 to the parboil can assist with the structural integrity of the finished product--they're less likely to fall apart and break after the parboil, and the small amount of vinegar isn't enough to taste.

You did not mention how long to keep them in the fridge to dry out. Is it just Long enough to preheat?

OK Fries seems to get the likes and great oven ones at that. I was thinking you could do a mini-series on rescuing mistakes in the kitchen - from the cold water in a split hollandaise etc. I guess over boiled potatoes could be turned into a vichyssoise if they haven't already become soup

All my life I've been told that it's very bad to put hot things in the fridge, I think because then it heats up the air on the inside and it won't cool as efficiently or even won't cool at all until it reaches... eh, a thermal equilibrium.

The end product 👌. Amazing. I've made homemade fries for decades, but not as 'healthy' as your version. I watched another person who likes to cook and he made fried potato skins. What is your opinion on that? I myself am not a big fan of the skin, but it uses all of the potato.
