86 yr old Antonia from Sicily makes bucatini pasta with sardines! | Pasta Grannies

Video Overview & Insights

Antonia shares her version of 'pasta con le sarde' a classic pasta dish from Sicily. And friend Michelangelo entertains us with his singing. He also owns the salted anchovy factory you see at the start - check out www.balistrerigirolamo.it

Sardines are so boney, I cannot eat them, fresh like that.

— @amialal4510

It make Antonia's recipe you will need:

500g bucatini pasta

I was born and raised in Palermo, my mom used to make this a lot. Here in the US it's not easy to find fresh sarde and wild fennel! Complimenti all signora Antonia, bravissima! I also speak the dialect and the Italian language.

— @rosachaney911

1 chopped onion, a glug of olive oil to soften it in

300g of wild fennel fronds, with stalks; you will need to boil this like you would spinach.

In a world of chaos these are the videos that need to be shared more!

— @jerylyep4837

Or finely slice a fennel bulb and add it with the onion, along with half a teaspoon of ground fennel seeds. Use the fronds from the fennel bulb if you can.

40g raisons

What an idea, an instrument in the shape of a boat ! Beautiful !

— @lidiaboldor6299

1/2 teaspoon powdered saffron

12 sardines, filleted

So provincial, so rustic, so countryside. I love everything about this video from the seasonal ingredients, the toasted breadcrumbs (my preference too) and Michelangelo's serenading. I hate that a huge part of the West isn't as communal as this anymore. (Except for the part that Antonia have like 40 family members - maybe tone that down.)

— @darthbiker2311

150g fine white breadcrumbs, toasted then stirred with a teaspoon each of sugar and extra virgin olive oil.

My family loves travelling to Italy and Sicilians are some of the loveliest people we've ever met on our travels!

My mother had the same orange Tupperware. We kept rice in it. This brought back memories.

I had this amazing busiate con le sarde in Trapani 2 years ago. It was like a heavenly meal. And I have been trying to re-create something similar in England ever since without much success, obviously. I can't even find fennel where I live 😆 The ingredients in Sicily are far more superior. Thank you nonna for showing us how to make pasta with sardines!

Nice. I am in Malaysia and brought fresh sardines for a lemon pasta for the first time. And yes easier to fillet by hand not knife. One you buy fresh sardines you won't ever purchase canned.

Per me lo zafferano copre gli odori delle acciughe e del finocchietto selvatico. Per me è meglio senza come si faceva una volta non mettevano lo zafferano

She’s adorable. So much like my Zia Isabella. Pasta con le sarde is one of my favorites. Hard to get wild fennel of Sicily in America. I use a fennel when I make this. Lovely songs 🤩 Viva San Giuseppe 🙏🏻 I miss Palermo
