Love these tips but I wanted to add to the "pause on marinating" comment when freezing. I have found if you add an acid to the meat, it will over power it. Maybe seasoned chefs knew this but I'm a relative newcomer to cooking and marinated chicken in pickle juice and other seasonings then froze it. Yuck. I ruined so much meat. So be careful with anything acidic.

With all the individual wrapping you do I'm surprised you don't have a vacuum sealer? I got the kind that is a reusable ziplock bag (not heat sealed) so I can individually ziplock bag a bunch of items if they need to be separate and throw all those into a big bag that I then suck all the air out of, no more freezer burn or ice on stuff! And since I'll reuse the vacuum bags it's not that big of an expense especially considering the savings

One way to keep from having to turn your soy eggs is to place a paper towel over the top of the eggs, making sure the soy sauce soaks into the towel. that allows the eggs to be covered in the soy all the way around, and you don't use as much soy sauce. A little messy when you want one, but it works....

My local supermarket recently reduced the price of mushrooms because they were starting to look a bit past their best. On a whim, I grabbed several packs, cursed myself, and then dehydrated them – your idea of cooking them before freezing hadn't even occurred to me. Dehydrating them takes a little longer when cooking them later, as you have to rehydrate them for 20-30 minutes, but the shelf life is still fantastic.
Next time it will strongly consider your idea of freezing them. 😅

Love a lot of these ideas, but I will definitely be incorporated the compound butter. I like the idea of starting the meal with the flavor already there.
@emom2Saw a chef talking about stock and what he said made a lot of sense: Your stock is going to taste like what you put into it, so if you use kitchen scraps, your stock will taste like kitchen scraps. I hate food waste as much as the next person, but that was the day i stopped keeping scraps to use in stock.
@Amythyst3411:53 If you freeze them with the skin on, you then just need to cut an X on the frozen tomato, add it to boiling water for 30 secs then peel them off really easily, or add the whole to soups and sauces

@kimmyb76I live with my bf. I noticed I was letting a lot of things rot before using. I particularly liked the bacon storage method of yours. I love to cook. It takes a lot of prep time but these tips are very helpful. I think I’ll be using that thigh method next time!

@apt5245when I freeze beef or salmon steaks or pork chops and the like, I freeze them on a parchment paper lined sheet pan then dump them in a large zip lock bag and label, there's no need to wrap them individually in plastic

@vriskieYou should also throw your tomato skins into your stock for flavor, or dehydrate them and grind them for extra flavor. You may want to consider souper cubes to reduce waste of plastic bags (and cost!).

@Suzer-w8fSome great ideas I haven’t thought of! Love the rotisserie chicken and the butter ideas. We also buy chicken thighs and breasts, marinade them for 24 hours, vacuum them in dinner portions and sous vide them at a later date. The sous vide thaws the bag, cooks them to perfection and the only thing left to do is sear them on the bbq or oven.
@GAdreaming2023Canning tomatoes is the simplest thing. Throw diced tomatoes into 8 and 16 oz jars. Process jars in a pot of boiling hot water, usually 12-15 min. Depending on how hot or cold your starting product is. So easy and not zip top bag waste. And product takes no freezer space and is ready to go for cooking.
@HollerRulesTo save your wallet try using plastic shopping bags instead of zip tops for things like whole carrot storage. Also, reuse zip tops by washing or placing empty zip tops back in freezer after use and refilling with same ingredient like the Vege mix.

@thiamc4382DO NOT wash mushrooms, just wipe them clean. Similarly, don't keep tomatoes in your fridge - as you said, it makes them grainy. Store at room temperature or prep as shown.

@Latchkeysandgovernmentcheesecooking the mushrooms prior to freezing is the best idea i've ever heard! they really are so terrible frozen raw.
@bexabeastYTI grow my own tomatoes and have way too many at the end of summer. Canning them is so much work, so I tried just freezing whole tomatoes, and you know what, it’s perfect. You just take out as many tomatoes as you need, defrost them, in water if you need it to happen faster, and then the skin slips right off, and the tomato is soft so you don’t need to cut it. They can only be used for cooking though, since they get soft after freezing.

Previously, I have been giving them a really quick wash, drying them as well as possible, slicing thick then flash freezing. I then split them into 1 cup portions in the little Ziploc bags. I have always used the frozen mushrooms in pot roast but now I want to try your method. Thanks for putting us onto this!
